Ingredients
  • 5 White bamboo shoots

  • Half Red pepper

  • 1 Broccoli

  • 3 Salted egg yolk

  • 5 pieces of garlic

  • 1 red Chili pepper

  • Extra Virgin Olive Oil

Recipe

Clean the ingredients and diced white bamboo shoots, sliced red pepper, pick the broccoli in small size, cut the garlic and chili pepper in small pieces.
Gently crush the salted egg yolk and bake in the oven for three minutes at 150 degree.
Boil the broccoli in salted water for 2minutes, the put them in iced water to keep the color
Mix salted egg yolks with extra virgin olive oil in 1 : 3
In a pan pour a bit of extra virgin olive oil, first stir-fry at medium fire the bamboo shoots for 1 minute, and then put the red peppers,
As soon they gets golden color take them out and put in a plate and wait for set.
Using the same pan, place the emulsion of salted egg yolks with oil and slowly keep stirring with low heat until foaming .
At this stage add garlic and chili pepper stir-fry and after 15 seconds turn off the fire. Add the cooked red pepper and white bamboo shoots, the broccoli and mix well.
The recipe is done, now can set the plate
